Today is National Empanada Day, and we’re celebrating with some lightened up recipes from around the web. Whether they’re stuffed with lean meat, beans, veggies, or all of the above, these healthy empanadas are great for a light meal or hearty snack. You can even freeze them and save them for up to three months so you’ll always have a delicious, flaky empanada ready to bake.
For the dough, you can use a variety of pre-made products like pie crust or special empanada discs. If you choose to make your own, be aware that many traditional empanada dough recipes call for lard or butter.
