This is one of the healthiest ways to cook fish, and also is an easy recipe that is packed full of vitamins and nutrients. The fresh tomatoes–which are in abundance at the farmer’s market this time of year–make this a perfect summer dish!

Baked Fish with Tomatoes

Ingredients (4 servings)

  • 4 tomatoes, chopped
  • 1 Teaspoon Salt, divided
  • 1/4 Teaspoon Black Pepper
  • 1 lb Fresh Fish Fillets (any white fish will work)
  • 1/2 Teaspoon Oregano
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Bread Crumbs


Preheat oven to 350°F.

Coat a 7″ x 11″ baking dish with cooking spray. Place tomatoes in bottom of prepared dish.

Sprinkle with 1/2 teaspoon salt and the pepper then place fish evenly over top and sprinkle with remaining 1/2 teaspoon salt, the oregano, oil, and bread crumbs.

Bake 12 to 15 minutes, or until fish flakes easily with a fork.
