The muffins don’t contain any of the ingredients you would find on the back of a store-bought box, but a healthy combination of natural alternatives. Instead of milk, the recipe uses unsweetened almond milk; rather than vegetable oil, coconut oil; in place of granulated sugar, coconut sugar or natural cane sugar; in substitute of flour, spelt flour (which is wheat free). Chopped walnuts add a nice little crunch to the muffins, and a touch of cinnamon adds some much-appreciated spice.
