There is nothing better than diving into a burrito bowl. Personally, I think actual burritos are way too messy and not worth the hassle, but burrito bowls are a totally different entity. They are full of so many delicious things; rice, meat (if you’re into that), cheese, guacamole, the list can go on, the possibilities are virtually endless! Today’s recipe inspiration, and the beautiful little bowl of goodness pictured above comes from The Roasted Root, and is a delicious and healthy spin on the typical burrito bowl. Instead of using rice, which is on the top of many people’s “foods I must avoid” list, the base of this bowl is “cauliflower rice.” It sounds strange, but the recipe’s instructions for making it are easy to follow, and the end result is toasty little bits of veggie goodness. Topped with fresh guacamole, and whatever else you like, you can enjoy every morsel of this burrito bowl totally guilt free.
