waffle iron omlette

Have a waffle iron laying around that you barely ever use because a) how many waffles can one person eat and b) making waffles involves a significant amount of work, especially if you make your batter from scratch and like to give your waffles cool flavors and toppings.  In today’s daily recipe inspiration, The Gracious Pantry is not only giving us a simple omelette recipe, she is also giving us a new use for that dusty old waffle iron.  Making omelettes in a waffle iron basically revolutionizes the entire world of egg breakfasts.  It is not only easier than making a regular waffle, but easier than making a regular omelette too. The best part is that after making the “waffles,” you can stick them in the freezer for up to 2 months and heat them up in a toaster, just like you would do with an Eggo.
