Apple Cranberry Polenta Cake

Dessert is allowed on every diet. Don’t let anybody tell you otherwise. If someone does try to tell you that you can’t have a slice of cake or a cookie or a deep fried twinkie wrapped in bacon, sneeze in their eyes and eat a double portion of whatever decadent dish you choose. I’m exaggerating a little bit but you get my point. For those nights when a sliced apple or a handful of grapes just aren’t enough to satisfy your sweet tooth, it’s handy to have a cake such as this one  from Baker Wannabe on hand. Dense but not rich, a slice of this cranberry-apple polenta cake is the perfect sweet dessert to round out your day with. Cornmeal, chopped apples, whole cranberries, and a nice handful of sugar get mixed together and baked in the oven to create a simply dessert that will fill you up without weighing you down.
