Empowered Noodle Bowl

Put down that microwaveable cup of Ramen noodles because we’re having real food tonight. I know they’re convenient and tasty, but those plastic cups are full of nothing but cheap ingredients and preservatives. Treat your body to a proper meal tonight by making this noodle dish from Oh She Glows’ new cookbook.  Starting with a base of soba noodles, the nutritional profile of this dish is taken to the next level with the addition of edamame, red bell pepper, english cucumber, carrots, green onions, and cilantro seeds. Tossed in a light dressing made from miso, rice vinegar, sesame oil, tahini, and maple syrup, this noodle dish is packed with more flavor and vitamins than microwaveable noodles  could ever dream to be.
