I’ll just say it. I’m obsessed with sweet potatoes. It’s my favorite healthy carbohydrate, and if it were possible I would eat one at every meal. I buy them by the case-full and I’ll leave it at that. Instead of rice, try an elevated Grilled Sweet Potato Salad with Green Onion, Basil, Thyme, and Feta (via Kalyn’s Kitchen). You’ll never want to eat boring ol’ rice again.
