March can be a very dreary month; it’s the boxing rink for winter and spring and for whatever reason, I find winter is usually the victor. Heavy gray skies and damp winds batter my spirits as I crawl slowly towards April, dragging my body through the slush and dirt on the New York City streets. Oatmeals and stews aren’t enough to sustain me; I need the colors and flavors of the summer to carry me through this misery. This mango salad from Crepes of Wrath (I’m nominating this for the best blog name of the year) is just what the doctor would prescribe if my melancholy was a disease. Juicy pineapple, sharp red onion, and salty peanuts are  tossed with a dressing made from nothing more than brown sugar, fish sauce, and chili flakes, all of which meld together to create a dish that is both spicy and sweet. The vibrant yellow of the mango infuses my soul with hope and joy while the heat from the chili flakes rev up my metabolism, giving me the power that I need to make it through this final month of dreadful weather.
