Traditional lasagna is a filling dish that can often leave you feeling bloated and weighed down after just a single serving. Typically made with large quantities of cheese, ground meat, and white pasta, its nutritional profile is a lot more depressing than we’d like to admit. Indulging in a plate of it once in a while is okay, but having several servings of it throughout the week could have adverse effects on your healthy lifestyle. However, with a few (okay more than a few) tweaks and alterations, This Rawsome Vegan Life created a unique recipe for a raw lasagna that will fulfill all your cravings without undoing your diet. Making raw food can be daunting as the recipes often involve a lot of steps but this one requires very little prep beyond making the cashew cheese. Simply marinate the tomatoes and zucchini in oil, put them in the oven at the lowest temperature for 1-3 hours to remove excess moisture from the vegetables and use that time to blend together cashews with some spices to create the cheese spread. Once the vegetables are done, simply remove from the oven, layer with the cashew cheese and spinach, and enjoy!
