Oven Butternut Squash Risotto

So I think we can all agree that February is an absolutely miserable month…well maybe not for those living to the south of the equator. But for almost everyone else living in the Northern Hemisphere, the second month of the year brings us no reprieve from constant snow and bitter temperatures. In order to make it safely to spring, our bodies and souls need to be fortified against the harsh winds of winter. Call-in: Comfort Food! Warm, hearty, and delicious, comfort food dishes provide your body with everything it needs to make it to April. Unfortunately, these dishes have a bad reputation for being unhealthy and thus, many diligent health-nuts (like myself) tend to avoid them.But it doesn’t have to be this way! With just a few, simple tweaks to a traditional recipe, you can create a dish that comforts your soul but not your waist. Just look at this recipe for notoriously-indulgent risotto by Food52.  The large amounts of cream and butter (typically found in a creamy risotto) are removed but all of the flavor remains! The addition of butternut squash lends a sweetness to this meal that will keep warm as you shovel your way from February to March.
