Yes, you read the title correctly: garlic soup. This recipe from Food 52 is almost like French onion soup, but with garlic instead. And without beef stock. Or any stock for that matter. That leaves 8 very simple ingredients: olive oil, garlic, cubed bread, paprika, water, salt, bay leaves, and eggs. The recipe could not be simpler, and comes together very quickly as a body and soul warming winter pick-me-up. I mean come on, it’s basically the soup version of garlic bread. What’s not to love? Use your favorite artisanal bread to give the soup more weight, and be sure to cook with freshly minced garlic.
