If you’re searching for a way to spice up your dinner sides this (especially) dreary winter season, look no further. This recipe from Food 52┬ábreathes new life into the tired and all too familiar side dish: steamed carrots. Instead of simply steaming the carrots, this recipe only requires a touch of water just before sliding the pan into the oven in order to steam-roast them. This method gives the carrots a more complex texture, unattainable by either a simple steam bath or a traditional roast. What makes this dish especially unbeatable is the seasoning used for the carrots. A symphonic mixture of garlic, cumin, coriander, red chili flakes, and cilantro sprigs gives this traditionally and less exciting dish ( that we have undoubtedly all eaten a million times) a new identity and structure. You may never eat this veggie plain again. Luckily, there are more ways than one when it comes to preparing carrots.
