Life is nothing without ice cream. In all honesty, it sometimes occurs to me that it might be my number one reason for not going vegan. I can live without chicken, cheese, butter, and dairy milk, but ice cream? I need it. .. to survive! I know there are vegan ice cream alternatives on the market but I find them to be strangely icy and unsatisfying. However, lately I’ve come across a fair share of recipes for making vegan ice cream at home and I can’t help but be incredibly intrigued. Just take a look at this one from Minimalist Baker. It looks creamy and dense and, if I didn’t know any better, I would have thought I was looking at pictures of Haagen Dazs. The texture is achieved through a combination of soaked cashews and coconut milk and can be customized to suit whatever flavor you desire! The recipe here is for chai ice cream but feel free to experiment. Add some peanut butter! Cacao nibs! The possibilities are endless. With recipes like these, making the switch to a vegan lifestyle is looking all the more plausible.
