This simple, elegant side dish pairs nicely with roast chicken or grilled pork tenderloin. The flavor from the pancetta enhances and does not overwhelm the flavor of the fresh fava beans.

Ingredients

  • 1, 1/2 inch think slice of organic Pancetta (or organic bacon)
  • 3 pounds fresh fava beans (see previous post on How to Cook Fava Beans)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons onion, finely chopped
  • 1/3 cup water
  • Salt & Pepper

Instructions

  1. Cook the onion in the oil until it becomes translucent, about 10 minutes
  2. Cut the pancetta in cubes and add in, cook for 5 more minutes
  3. Add beans, water, salt and pepper
  4. Simmer, covered, for 8-10 minutes
  5. Uncover, and finish cooking until all water has been evaporated
