This super simple recipe is also versatile – substitute any nuts you have on hand! Since it uses whole wheat flour and lots of nuts, we like to think that this is a healthy cookie option!

Walnut Cookie Squares

  • 1 cup whole wheat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 cups brown sugar, packed
  • 2 cups walnuts, chopped
  • 2 eggs
  • 1 tsp vanilla extract


Preheat oven to 325 degrees and line baking sheet with parchment paper.

In large bowl, stir together the flour, salt, and baking soda.

Add the brown sugar and walnuts and mix until blended well.

In separate bowl, whisk eggs together with vanilla extract.

Stir egg mixture into dry mixture and stir until combined.

Press dough onto bottom of baking sheet.

Bake in preheated oven at 325 degrees for 12 to 15 minutes or until browned lightly.

Remove and let cool on rack, then cut into squares.
