Now that Spring is on its way, I can’t help but start to gather fun Spring recipe ideas. Fresh fruit and seasonal flavors are always fun to cook with, but it’s not always easy to find quality seasonal recipes. This week’s edition of Eat and Greet features Adventures in Cooking, an amazing health food blog that has recipes perfect for every season. The recipe index sorts meal ideas by season so finding new and creative Spring recipes was super easy. From cakes to fish dishes, breakfast to dessert, there is a recipe for everyone on this site. Some of my favorites are the cookies, breads, and tarts. There are so many recipes to choose from on this blog, you’ll never run out of new things to try! Complete with whipped cream cheese frosting, this layered raspberry cake is perfect for any occasion, from birthdays to weddings. Made with freeze dried raspberries as natural food coloring, this cake is light, fluffy, and slightly sweet with a subtle hint of raspberry. You can use raspberry jam in between the layers or garnish the top with fresh raspberries if you’d like!

Cuban Shrimp Bruschetta

Made with fresh shrimp, avocado, olive oil, and lime juice, these Cuban shrimp bruschetta appetizers are the perfect start to any dinner party or date night. Served on toasted baguette slices, these shrimp appetizers are flavorful and packed with protein. Fresh lime juice and cilantro complete this dish and give it a nice tangy finish.

Flourless Chocolate Cookies

These flourless chocolate cookies are the perfect after dinner treat. Made with cocoa powder, espresso powder, and egg whites, these cookies are chewy, sweet, and much healthier than traditional chocolate cookies. You can add walnuts or almonds for an added crunch.
