Perfect for a weeknight dinner or a dinner party, fish tacos are delicious, flavorful and easy to prepare. They are a sure way to get healthy omega 3 fatty acids and vegetables into your diet. When buying fish, stick with firm varieties such as sea bass, grouper, mahi mahi, tilapia or basa. I like to make my fish a little spicy by brushing the filets with the adobo from canned chipotles. It adds a small kick and ton of flavor. If you prefer to skip this step simply season the fish with salt and pepper.
Start by making the Chipotle Drizzle by combining ¼ cup light mayo and 2 tablespoons of adobo sauce from the canned chipotle in adobo. You can find it in the international isle of your supermarket. Mix it all together and set aside. Then prepare the ingredients for the fish tacos.
Fish Tacos
2 fish filets of your choice, I used grouper
¼ cup chipotle in adobo
1 small red onion, thinly sliced
½ cup vinegar
5 flour tortillas
Shredded cabbage
1 tomato, cubed
1 avocado, cubed
1 scallion, thinly sliced
- Combine sliced red onion with vinegar and set aside.
- Cut fish into rectangular chunks, brush with chipotle adobo and grill until golden brown.
- To assemble, wrap tortillas in paper towels and heat 1 min in microwave.
- To assemble, place fish on the tortilla, top with slightly pickled onions and remaining ingredients. Drizzle with sauce and enjoy.
