With an abundance of cucumbers and other squash in the farmers market, I had been thinking of making my own homemade pickles. However, the pickling process can be long and complicated. With this quick pickle recipe, you get the immediate satisfaction of eating the pickles within an hour. The only drawback is that you can not keep them forever in the fridge, but that has yet to be a problem since they went so quickly!

Quick Homemade Pickles

Ingredients (6 servings)

  • 3/4 Cup Red Wine Vinegar
  • I large cucumber, sliced VERY thinly (mandolin is recommended)
  • 1 Tablespoon Sugar
  • 1 Tablespoon Red pepper flakes
  • 1 Tablespoon Salt
  • Dash of Pepper


Add all ingredients in a mason jar.

Let sit in refrigerator for one hour before serving.
