Today is International Coq Au Vin Day. Coq au vin, French for “rooster with wine” is a dish comprised of chicken braised in red wine, pork fat, mushrooms and spices. What started as a peasant dish has become an almost gourmet home dinner thanks to Julia Child, who introduced it to the American public through her cookbook and TV show.
