Finger foods are great for a romantic picnic. This simple recipe meets all of the best criteria: it uses local, organic ingredients, and is an easy and healthy recipe! This flavor combination is classic Mexican, and is super simple to make at home without any special ingredients. The lime, feta, and chili perfectly match the super sweetness of local summer corn. If you are one of the people who hates cilantro, substitute parsley for the cilantro, lemon for the lime, and red pepper flakes for the chili powder for more of an Italian take.
If taking on a picnic, make ahead and store in one layer in a tupperware container in the fridge. Crostini and other one bite dishes are perfect for picnics, easy and delicious!
