August 21st is National Spumoni Day. It’s way overdue that this classic Italian ice cream treat got its proper recognition. You get layers of different flavored ice cream with candied fruits and nuts, plus whipped cream, and always the addition of pistachio. That may not seem very healthy at first glance, but as it turns out, our friends at Good Housekeeping are watching out for us. They’ve just put up a recipe for Spumoni Icebox Cookies on their site, which promises plenty of spumoni flavor at only 3g of fat per serving. That’s not bad for a spumoni dessert–but we’re a little disappointed that Good Housekeeping didn’t take the time to salute National Spumoni Day with their new post. It’s like they’re just taking National Spumoni Day for granted! Anyway, we’re looking forward to giving this recipe a try. After all, National Spumoni Day comes but once each year…
