You picked up some beets at the store the other day because you were feeling healthy and now they’re just sitting in your fridge, staring up at you every time you go to close the door on their cute red faces…again.  Or, like me, you absolutely love beets, bought them, and for one reason or another, you’ve got no clue what to do with them this time around.

Well, I’m about to blow your taste buds with a simple, fresh, beet-tastic salad that involves the help of my favorite green friend: the avocado.  (Seriously, where and how can you go wrong with an avocado?) Plus, I had a few endives in my fridge, and voila! With some strong flavors coming in from Roquefort cheese and some added crunch with walnuts, my new favorite springtime salad was born.  I hope I don’t have to go as far as to stress the health benefits of this salad…c’mon people! It’s the new chant on the street: “Beets and Avocado and Endives, OH MY!”

Beet, Avocado and Endive Salad

Ingredients: (makes 2-3 servings)

  • 3 beets, cooked and cubed
  • 1-2 avocados, cubed
  • 2 endives, cut into half inch pieces
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar
  • Fresh chopped herbs for taste (basil, thyme)
  • ¼ cup crumbled Roquefort cheese (other bleu cheeses can be used)
  • ¼ cup crushed walnuts
  • Salt & pepper for taste
  • 1 small clove garlic, minced (optional)

Instructions:

1)      Place the cubes of beets in a bowl with the avocado and endives

2)      Add the olive oil and vinegar (enough to make a nice coat of dressing on the salad)

3)      Add a sprinkle of freshly chopped basil or thyme (I added both and really thought it enhanced the vinaigrette)

4)      (Optional step—this is where I added the small clove of garlic.  It might just be me, but there’s something about garlic and beets that just drives me crazy!)

5)      Mix everything together gently (not to turn the avocado into paste)

6)      Sprinkle the top with the cheese and walnuts

7)      Salt and pepper to taste

I ate the salad straight like that but you could, of course, stack it on top of a nice pile of greens.  YUM!

Don’t feel guilty…I was thinking the same thing!  A cool, crisp glass of white wine does sound like the perfect pairing for this delicious, healthy salad 😉
