These quiche-like cheesy broccoli bites are baked instead of fried and make a fantastic party appetizer. You can make them gluten free by using crushed Rice Chex instead of regular breadcrumbs. Feel free to substitute the cheddar for your favorite type of cheese!

Cheesy Broccoli Bites

Ingredients (40-50 bites)

  • 2 cups frozen broccoli, thawed and chopped
  • 6 eggs
  • 1/4 medium onion, finely diced
  • 1 tsp. parsley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups shredded cheddar cheese
  • 1/3 cup softened margarine
  • 1/4 cup milk
  • 2 cups bread crumbs


Preheat oven to 350.

Whisk together eggs, onion, parsley, salt and pepper in a large bowl. Set aside.

Stir in cheese, margarine, milk and breadcrumbs, then mix in broccoli. Let stand for 10 minutes to thicken (add more breadcrumbs if needed)

Roll into balls and arrange on greased baking sheet.

Bake for 15-20 minutes until firm and lightly toasted.
