This slow cooker chili was adapted from a chili mix created by the Women’s Bean Project. We took the ingredients listed on their spice packet and added a few of our own, like cocoa powder and beer. You can use any meat you’d like, but we prefer lean ground turkey.
Crock Pot Turkey Chili

Ingredients (6 servings)
- 1 lb. ground turkey
- 1-2 tsp. olive oil
- 1 15-oz. can red beans
- 1 15-oz. can pinto beans
- 1 15-oz. can kidney beans
- 2 tomatoes, diced
- 1/2 green pepper, diced
- 1/2 large onion, diced
- 2 cloves garlic, minced
- 12 oz. beer
- 1 cup low sodium chicken stock
- 1 tbsp. cocoa powder
- 1 tsp. kosher salt
- 1/2 tsp. pepper
- 1 tsp. dried parsley
- 1/2 tsp. chili powder
- 1/2 tsp. cayenne pepper
Instructions
Heat olive oil in a large skillet. Brown turkey, then drain fat and set aside.
Drain cans of beans and add to slow cooker. Layer in (do not stir) tomatoes, green pepper, onion, garlic and cooked turkey. Pour in beer and chicken stock and add seasonings.
Cook on low for 4-5 hours until chili has thickened. Stir and serve plain or with your choice of shredded cheese.
