
The London 2012 games are well underway, and it seems like everyone is getting into the Olympic spirit. We were feeling inspired by the Olympic rings, and rounded up some healthy recipes for foods that remind us of this iconic symbol (with gluten free and vegan picks!). These gluten-free treats are made with corn flour, brown rice flour, fat-free ricotta cheese and unsweetened coconut milk. Throw in fresh strawberries and you’ve got yourself a gold medal-worthy healthy dessert.

I love coconut. And I love healthy baking. So naturally, I love these muffins. There’s no butter to be found here—just coconut oil, light sour cream and an egg. The perfect combination of sweet, tart and nutty.

VEGAN BLUEBERRY CHEESECAKE CUPCAKES
So maybe they’re not technically “cheesecake,” but these vegan blueberry cupcakes still look absolutely mouthwatering with cashew-based cream on a prune-almond crust. The best part is, you can store them in the freezer to thaw out in perfect single servings.

ZUCCHINI FETA OLIVE OIL MUFFINS
I really like the idea of a savory muffin, so I was immediately drawn to this recipe. Zucchini, feta and basil are just excellent together, and it gets major points for using whole wheat flour and olive oil.

SUMMER SQUASH & RICOTTA GALETTE
Take a super-simple, butter-free homemade pie crust, layer it with creamy ricotta cheese and fresh zucchini and yellow squash, and pop it in the oven. It’s kind of like a squash pizza…but better.

Gluten-free AND vegan? Definitely a winner in my book. This cookie recipe uses almond flour, Earth Balance Buttery Sticks, and vegan dark chocolate.

SWEET POTATO BREAKFAST COOKIES
It may be summer, but these vegan breakfast cookies are like Thanksgiving in baked good form: they’re made with sweet potato puree, pumpkin pie spice, pecans and cranberries, plus whole wheat flour, oats and flaxseed for a healthy dose of whole grains.

COLLARD GREENS, APPLE, PECAN & GOUDA OMELETTE
This light egg white omelette would make a perfect breakfast, lunch or dinner. The egg whites give a neutral base for the sweet apple slices, smoky Gouda and crunchy pecans, while the dark leafy greens pack tons of vitamins and minerals.
