You’re reading this right–a HEALTHY cookie! This recipe, created by Hollywood legend Sylvester Stallone to keep his energy up while filming the Rocky series, is from Stallone’s weight loss book Sly Moves. It’s packed with good-for-you starches like oats and whole wheat and brown rice flours, and uses olive oil instead of butter for fat. Try this delicious treat as a pre-workout snack for that extra energy boost. If the cookie is too plain for you, add raisins, dried cranberries, or chopped nuts.
- 1/2 cup whole wheat flour
- 3/8 cup brown rice flour
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3/8 cup brown sugar
- 3/4 cup Quaker old-fashioned rolled oats
- 1/2 egg
- 1/4 cup olive oil
- 2 tbsp water
- 1/2 tbsp molasses
Preheat oven to 375° F.
In medium bowl, combine whole wheat and rice flours, baking soda, cinnamon, salt, brown sugar and oats. Make an indentation in the center and add egg, olive oil, water and molasses. Mix until dough is moistened.
Roll into tablespoon-size balls and place two inches apart on ungreased cookie sheet. Bake 8-10 minutes until done. Cool on wire rack.
