Today is National Macadamia Nut Day! Macadamia trees, which can produce nuts for over 100 years, were first discovered in the rainforests of Australia thousands of years ago. This nutritious nut is high in protein, calcium, dietary fiber, iron and potassium, and its oil used in many beauty and skin care products. Celebrate by whipping up a batch of delicious Coconut-Macadamia Nut Cookies from Cooking Light, or maybe some no-bake Chocolate Macadamia Coconut Bites (apparently coconut and macadamia is a match made in heaven). Just don’t let your dog get his paws on them…macadamias are toxic to your four-legged friend!
