Cooking with Ginger

Ginger is the rhizome from the plant Zingiber officinale. It’s a common cooking spice for familiar Asian dishes. Ginger has a bitter taste to it when eaten by itself, but when added to other ingredients, it can have a completely different taste.

There are many health benefits when you eat ginger. For instance, many people would eat a piece of ginger to relieve nausea, a common remedy for women in their early stages of pregnancy that have morning sickness. Ginger can also improve blood circulation, lower blood sugar, be an antiseptic for minor cuts and scratches and can treat migraine headaches. Another common use is drinking ginger tea to relieve a sore throat.

When ginger is added to fruit, it can enhance the natural sweetness of the fruit. A great combination with ginger is pears and lemons.

Pear Ginger Crumble

Ingredients

Topping:

2/3 cup old-fashioned oats
1/4 cup oat flour or whole wheat flour
1 teaspoon ground cinnamon
1/2 cup packed light brown sugar
1/4 cup canola oil
1/8 teaspoon salt

Filling:

3 pounds firm but ripe pears, peeled, cored and cut into 1/4-inch slices
1 tablespoon freshly grated ginger
1 tablespoon fresh lemon juice
1 1/2 cups reduced-fat vanilla ice cream or frozen vanilla yogurt, optional
2 tablespoons sugar
1 1/2 tablespoons all-purpose flour

Directions

Preheat the oven to 375 degrees F.

For the topping: Combine all the ingredients into a medium bowl. With a fork, work together the ingredients until moistened.

For the filling: Combine the ginger, pears slices and lemon juice into a large bowl. Add the flour and sugar and toss to blend.

Spray an 8 by 8-inch baking dish with cooking spray. Pour the pear mixture into the baking dish and bake for 40 minutes until the pears are tender and the topping a golden brown. Let cool for 10 minutes before serving. Serve warm or at room temperature, with a scoop of ice cream, if desired.

Tips:

Ginger can be kept for up to six months when stored in the freezer. Tightly wrap the ginger in plastic and stick it into the freezer.

Use a vegetable peeler to cut small slices of ginger.
