Fact: I make the best oatmeal raisin cookies ever. But they’re not exactly healthy. So when I came across this recipe for vegan banana strawberry oatmeal squares, I thought it would be a perfect way to give my favorite cookie a HWTC makeover. They’re super easy to make, and since there’s no butter or eggs, they’re pretty much fat-free. You can’t get much better than that! Make them as a healthy dessert, or store them in an airtight container and have them for breakfast.

VEGAN OATMEAL RAISIN BARS

Adapted from 100 Pounds 100 Days 

1 small banana, mashed
½ cup unsweetened applesauce
¼ tsp. vanilla extract
1 tbsp. sugar
1 ¼ cup Quaker instant oatmeal
¼ tsp. baking powder
¼ tsp. baking soda
1 dash salt
1 dash cinnamon
½ cup raisins
¼ cup chopped walnuts (optional)

Preheat oven to 350˚ F.

In a medium bowl, blend banana, applesauce, vanilla extract and sugar. In a separate bowl, mix oatmeal, baking powder, baking soda, salt and cinnamon.

Add the banana mixture to the oatmeal mixture and stir until blended. Fold in raisins and walnuts.

Press mixture into the bottom of a greased 8×8 baking dish and bake for 40-45 minutes until golden brown (a fork  should come out clean when inserted into the center). Cool for 20 minutes before cutting into bars.
