While we believe that every day should be Eat Your Vegetables Day, the official food holiday planners (whoever they might be) have deemed June 17 as the day that we celebrate our ever-important veggies. Because they’re rich in vitamins, minerals, and other nutrients, we know we should include several servings of vegetables in your daily diet, but plain old carrot sticks or a bowl full of greens can get a little boring.
