With Valentine’s Day right around the corner, you’re probably thinking of some great recipes for two. Instead of focusing on just dinner, give some love to breakfast and lunch. We found two great recipes that are quick, easy and delicious. They might not be romantic in the traditional sense, but trust us, your significant other will love how you took the time to switch things up!
Let’s Start with Breakfast:
This veggie omelet recipe is just the perfect amount for two people and comes to us courtesy of our friends at allrecipes.com.
Ingredients
2 tablespoons butter
1 small onion, chopped
1 green bell pepper, chopped
4 eggs
2 tablespoons milk
¾ tablespoon salt
1/8 teaspoon freshly ground black pepper
2 ounces shredded cheese of your choice (Swiss, Monterey Jack or Gruyere work well)
Instructions
Start by melting 1 tablespoon of the butter in a medium skillet on medium heat. Place the onion and bell pepper into the skillet and cook for 4 to 5 minutes, stirring occasionally until vegetables are just tender.
While the vegetables are cooking, beat the eggs with the milk and ½ teaspoon salt and pepper.
Shred the cheese into a small bowl and set aside.
Remove your vegetables from the heat, transfer them into another bowl and sprinkle the remaining 1/4 teaspoon salt over them.
In the same skillet, melt the remaining 1 tablespoon of butter over medium heat, coating the skillet completely. When the butter is bubbly, add the egg mixture and cook the eggs for 2 minutes or until the eggs begin to set on the bottom of the pan. Then, gently lift the edges of the omelet with a spatula to allow the uncooked egg to flow toward the edges and cook. Continue cooking for another 2 to 3 minutes or until the center of the omelet starts to look dry.
Sprinkle cheese over the omelet and spoon the vegetable mixture into the center. Using a spatula, gently fold one edge of the omelet over the vegetables and let it cook another 2 minutes or until the cheese melts to your favorite consistency. Finally, slide the omelet out of the skillet onto a plate and cut into two servings!
Lunch for Two:
This broiled tomato sandwich recipe is also from allrecipes.com and is perfect for two people.
Ingredients
2 tablespoons olive oil
2 tablespoons balsamic vinegar
4 ripe tomatoes, sliced
3 tablespoons mayonnaise
½ teaspoon dried parsley
¼ teaspoon dried oregano
¼ teaspoon black pepper
3 tablespoons grated parmesan cheese, divided
4 slices bread, lightly toasted
Directions
Preheat your oven to broil.
In a shallow bowl, whisk together the olive oil and vinegar. Marinate the sliced tomatoes in this mixture, stirring occasionally. In a different bowl, combine the mayonnaise, parsley, oregano, black pepper and 4 teaspoons of parmesan cheese. Spread this mixture on each slice of toasted bread. Place the marinated tomato on two slices of bread and sprinkle with the remaining parmesan cheese. Place on a baking sheet and broil for 5 minutes or until the cheese turns golden brown. Serve immediately either open faced or closed.
Remember, cooking for two means simply adjusting the ingredients for a mouth-watering meal.
