Have you ever tried to take the skin off an eggplant with a vegetable peeler? In this video clip from The Daily Meal, Chef Marc Murphy demonstrates how to peel an eggplant using one of his favorite kitchen tools, a serrated knife. The thick, slippery eggplant skin makes it difficult to use a regular peeler, so Murphy cuts the eggplant in half (the flat edge makes it sturdier and easier to work with) before using the knife to cut the peel off in small sections, turning the eggplant as he goes. Murphy tells The Daily Meal’s Ali Rosen that he prefers a serrated knife because it provides greater control, but a standard French or chef’s knife will also work for this. Once the eggplant is peeled, he suggests dicing and roasting it.
