We LOVE What I Ate Wednesday, a weekly food diary “party” hosted by one of our favorite bloggers, Jenn of Peas and Crayons. What I Wish I Ate Wednesday is Healthy Way to Cook’s roundup of the best What I Ate Wednesday posts from the previous week.
Amanda over at Diary of a Semi-Health Nut shared a delicious-looking Egg Bagelwich she made using leftover veggies and pepperjack cheese. I really like her “semi-healthy notes” and customized nutrition facts! She’s absolutely right that we shouldn’t be afraid of carbs—as long as you keep it in balance with protein and fats, nothing should be off-limits!
Courtney of Journey of a Dreamer had tons of healthy protein supplements and paleo dishes like Turkey Meatballs and Pad Thai in her WIAW post. She also reviewed KIND Nuts & Spices bars, which look fantastic. Five grams of sugar, 6 of protein and 7 of fiber, with natural ingredients? Sounds like a winner to me.
This WIAW post on Alex’s Life, Liberty and the Pursuit of Foodiness featured some of her favorite summer eats from the weekend. In keeping with the “Summer Staples” theme, she enjoyed some of her own staples: mangoes, ice cream, and Saranac Shandy (three things of which I whole-heartedly approve).
My Mission Impossible’s Kristin has decided to go gluten-free for 30 days to see if she, as her doctor suggested, has a food allergy or sensitivity. Her WIAW post proved that she’s doing a great job finding and making satisfying GF dishes like salsa chicken with black beans and avocado. I’d love to get the recipe for the cinnamon swirl protein muffins she made!
