We LOVE What I Ate Wednesday, a weekly food diary “party” hosted by one of our favorite bloggers, Jenn of Peas and Crayons. What I Wish I Ate Wednesday is Healthy Way to Cook’s roundup of the best What I Ate Wednesday posts from the previous week.

I would love to get the recipe for the baked blueberry oatmeal Alexis over at Fit-Possible posted last week. She topped it with chia jam, protein icing and fresh fruit…yum! Her homemade sweet potato chips look perfectly crisp, and apparently make a great delivery device for mango salsa.

Shannon of Healthiful Balance gave us her quite literal take on WIAW by posting pictures of everything she ate throughout that entire day. The spaghetti dish with chicken and peas she made for lunch reminds me of my favorite quick fix meal, and all her snacks looked really healthy and delicious! I also really admire her attitude of listening to her body instead of trying to follow a strict diet. 

Life Starts Now’s Jen went “Primal” with her eats and shared a recipe for a simple primal breakfast bake with eggs, fruit, nuts, seeds and coconut. Salmon with veggies for lunch and dinner might sound repetitive, but she prepared them two completely different ways to change things up. Nothing wrong with a little extra omega-3’s in your diet!

Jo from Living Mint Green gave us her dining out edition of WIAW from a weekend of incredible-looking restaurant meals. I’m a die-hard meat-eater, but even I’m jealous that she went to all these great vegan and vegetarian places. I’m continually amazed at what you can do with tofu…like the tofu cake with apple beet salsa and horseradish crema she ordered? I want that. Like now.
