I was so excited to read everyone’s take on Jenn’s new theme for the month, “Summer Staples”!
Christy from Chocolate Covered Diamonds has gone “pseudo-veg,” as she calls it. Without even realizing it, she had basically been eating vegetarian over the last few months, and now she’s seeing if she can consciously adopt a mostly meat-free diet. She posted some amazing pictures of vegetarian restaurant food from her trip to the beach, plus some of what she’s been eating at home. She also went to Chobani Soho…SO JEALOUS! I only work in midtown—why have I not been down there yet?!
Conscious Cravings author Lindsay has had a lot on her plate lately (no pun intended!) and caught us up on what she’s been eating during her time away from her blog. She posted an incredible-looking fruit-filled salad from her local Whole Foods, and also wrote that she’s rediscovered her love for Jelly Belly jellybeans. Can’t get enough of those—they really do taste like the flavors they’re supposed to be!
I love everything that Angela shared in this WIAW post on Happy Fit Mama. From her yogurt/granola/chia seed/fruit parfait (served in the cutest cactus glass!) to the spinach blueberry muffins for her adorable kids, I’m totally on board with all of her eats. Such healthy choices, too! (hey, the Oatmeal Cookie Chunk Ben & Jerry’s has oats in it… 🙂 )
Tiff of Love, Sweat, and Beers combined a little bit of last month’s “Fun, Food & Fitness” theme with the current one by posting about her swimming workout. I love her PB & blackberry sandwich, and the shrimp, kale & rice dish she made for dinner looks so tasty!
Katie shared three delicious, healthy meals on Sunshine Meets Happiness. I’m no stranger to finding ways to use up fruit before it goes bad, so I appreciated her strawberry-filled cereal, and her Asian-inspired noodle and vegetable lunch looked great. I also really want to try the fiesta salad with lemon-honey mustard dressing she made!
