We LOVE What I Ate Wednesday, a weekly food diary “party” hosted by one of our favorite bloggers, Jenn of Peas and Crayons. What I Wish I Ate Wednesday is Healthy Way to Cook’s roundup of the best What I Ate Wednesday posts from the previous week.
Posts from January 8:
Nope, that isn’t a breakfast dish you’re looking at, it is a flavorful red pepper chili served with a healthier version of a classic cornbread waffle. Attack of the Hungry Monster‘s Wednesday looks like it was full of delicious meals, like a veggie enchilada salad and a cherry-banana fruit smoothie. Check out the link for some healthy and hearty recipes.
This tofu and brussel sprout stir fry was just one of the many delicious meals Chelcie’s Food Files had on Wednesday, and it’s seriously making me want to run home and make brussel sprouts right now. Who knew tofu could look so appetizing? Yum! (I’m also super jealous of her breakfast sandwich, which you’ll just have to check out on her blog.)
Peachy Palate never fails to impress, and this week is no exception. This amazingly delicious looking fudge cake was definitely the star of her Wednesday meals, and guess what? They’re vegan, gluten free, and sugar free, too! She posted the recipe over the weekend, so if you want to indulge in fudgey, healthy goodness too, you can! Check it out here. And I don’t want to ruin the surprise for you, but the special ingredient is quite interesting…
