Farmer’s Markets are beginning to brighten up for the summer – there is more produce being offered than just brown and green items like hearty lettuces and potatoes. Two of the newest arrivals are asparagus and rhubarb. Rhubarb, with its unique flavor that can go both sweet or savory, is only available for a little while, so be sure to pick some up. Rhubarb can actually be used in both sweet and savory dishes! Asparagus is another versatile vegetable, and stands up to hearty flavors like prosciutto. Asparagus can be cooked in many different ways- steamed, roasted, or even grilled! Another find at farmer’s markets right now is herb seedlings. If you have access to a sunny spot for growing things – start a miniature herb garden!
